Baked Macaroni & Cheese Casserole Recipe

Yield: 2 big servings

1 cn (10 3/4 ounces) Condensed Cheddar Cheese Soup
1/2 cn Milk
1 ts Prepared Mustard
1/8 ts Pepper
2 c Hot cooked Elbow or medium Shell Macaroni (1 1/2 c dry)
2 ts Margarine or Butter, melted
1 tb Dry Bread Crumbs

Prep. Time: 20 Mins, Cook Time: 20 Mins

In 1-quart casserole, combine soup, milk, mustard and pepper. Stir in macaroni. In a cup, combine margarine and bread crumbs. Sprinkle over casserole. Bake at 400F 20 minutes or until hot and bubbling. Makes 2 1/2 Cups.

Quick Skillet Chicken Supper Recipe

Yield: 4 Servings

1 tb Vegetable oil
4 Chicken breasts
1/2 lb Italian sausage - hot
3 md Carrots, sliced
1 md Onion, sliced
1 Garlic clove, minced
1/2 c Dry red wine
1 Bay leaf
1 ts Thyme - dried
1/4 ts Pepper
14 oz Beans with pork in tomato
Parsley, chopped

Prep Time: 30 min, Cook Time: 30 min

Chicken breasts should be skinned and de-boned. Red wine may be replaced by 1/2 cup chicken broth with 1 tb red wine vinegar.

In a large frying pan, heat the oil over medium-high heat. Brown the chicken and sausage. Add carrots, onion and garlic; saut‚ for 2 minutes. Drain off the fat. Stir in the wine, bay leaf, thyme and pepper. Cover and simmer over low heat for about 15 minutes or until chicken is no longer pink. Stir in the beans and heat through. Sprinkle parsley on top.

Quick Chicken & Mushroom Skillet Recipe

Yield: 6 Servings

2 lb Chicken thighs
3 tb All-purpose flour
2 tb Butter
1 1/2 c Mushrooms, sliced
1 Carrot, chopped
1 Onion, chopped
1 Garlic clove, minced
2 tb Fresh thyme, chopped, or -2 ts dried
1 tb Lemon rind, grated
1/2 ts Salt
1/2 ts Pepper
1 c Chicken stock
1/4 c Sour cream

Prep Time: 15 mins, Cook Time: 37 mins

In plastic bag, shake chicken with 2 tb of the flour. In nonstick skillet, melt butter over medium-high heat; cook chicken, turning once, for 15-20 minutes or until well browned and juices run clear when chicken is pierced. Remove from pan; set aside and keep warm.

Drain off fat from skillet. Add mushrooms, carrot, onion, garlic, thyme, lemon rind, salt and pepper; cook over medium heat, stirring often, for about 10 minutes or until mushrooms are browned. Whisk remaining flour into stock; pour into pan and cook, stirring to deglaze pan, for 1-2 minutes or until thickened. Reduce heat to medium-low; stir in sour cream. Return chicken to pan; cook, without boiling, for 5 minutes or until chicken is heated through. Serve with egg noodles richly flecked with chopped parsley and lemon rind.


Easy Tarragon Chicken Recipe

Yield: 4 Servings

2 tb Butter or margarine
1 tb Vegetable oil
4 Chicken breasts halves -skinned and boned
3/4 c Dry white wine or vermouth
2 ts Dijon mustard
1 tb Chopped fresh tarragon -or 1 tsp dried
1/2 ts Salt
Freshly ground pepper
3/4 c Heavy cream

Prep Time: 15 min, Cook Time: 25 min

In a large frying pan, melt butter in oil over medium-high heat. Add chicken breasts and cook, turning once, until lightly browned, about 4 minutes a side. Remove and set aside.

Add wine to the pan. Bring to a boil, scraping up born\wn bits from bottom of pan with a wooden spoon. Stir in mustard, tarragon, salt and pepper to taste. whisk in cream and boil until mixture thickens slightly, about 3 minutes.

Return chicken to pan; turn in sauces to coat and simmer 7-1/2 minutes until chicken is tender. remove chicken to a serving platter, spoon sauce over it.

Easy Coq Au Vin Recipe

Yield: 2 Servings

2 sl Bacon
2 Skinless boneless chicken Breast halves
All-purpose flour
3/4 c Frozen petite or pearl Pearl onions
2/3 c Dry red wine
1/3 c Canned low-salt chicken Broth
3/4 ts Dried thyme

Cook Time: 25 min

Serve buttered egg noodles and broccoli spears with this streamlined classic. Cook bacon in heavy medium skillet over medium heat until crisp and brown. Transfer bacon to paper towel and drain. Crumble bacon.

Season chicken with salt and pepper. Coat with flour; shake off excess. Add chicken to same skillet and saute over medium heat until chicken is brown and just cooked through, about 4 minutes per side. Using tongs, transfer chicken to plate.

Pour off all but 1 tablespoon fat from skillet. Add onions, wine, broth and thyme to skillet. Bring to boil, scraping up browned bits. Reduce heat to medium-low and simmer until onions are tender and sauce thickens slightly, about 12 minutes; season with salt and pepper. Return chicken and any accumulated juices to skillet. Simmer chicken until just heated through, about 2 minutes. Transfer chicken to plates. Spoon sauce over. Garnish with bacon.

Quick Cheese or Chicken Enchiladas Recipe

Yield: 6 Servings

1 large can Enchilada sauce
1 Pkg corn or small flour tortillas
Chicken breast, cut in small pieces
Jack cheese, grated
Cheddar cheese, grated

Prep Time: 15 min, Cook Time: 45 min

Spray a 9" x 13" baking dish with Pam. Place small amount of sauce in pan. Heat corn tortillas in microwave to soften. Fill tortillas with chicken, cheese or both. Fold over and place in pan, seam side down. Cover with remaining sauce and sprinkle with cheese(s). Bake for 45 minutes at 350F.

Easy Beef Roast Crockpot Recipe

Yield: 6 Servings

2 lb To 3 lb Chuck roast
2 Bags of Frozen Stew Veggies -( The Large Ones)
2 cn Cream of Mushroom soup
1 Pack of Lipton onion soup

Crock Pot: Put in the Crock pot the meat 2 1/2 cups of water the Soup on the top of the meat put the Veggies on top of the soup. Turn on your crock pot to ( if cooking 8 or more hours "LOW") if 6 or less ( "HIGH" )

Quick Kielbasa Casserole in a Pot Recipe

Yield: 5 Servings

1 cn Condensed creamy onion soup
1 cn Condensed tomato soup
1 c Water
1 cn Small white beans, rinsed & drained (16 oz)
3/4 lb Kielbasa (sausage) cut into 1/2" slice
4 sm Potatoes, peel and quartered
3 md Carrots, cut into 1/2" slice
1/2 ts Dried thyme leaves, crushed
1/8 ts Pepper
1 Bay leaf
Fresh thyme or parsley for garnish

Prep Time: 15 mins, Cook Time: 25 mins

In 4 quart saucepan, combine soups and water. Add beans, kielbasa, potatoes, carrots, thyme, pepper and bay leaf. Over medium heat, heat to boiling, stirring occasionally. Reduce heat to low. Cover; cook 25 minutes or until vegetables are tender, stirring occasionally. Discard bay leaf. Garnish with thyme, if desired.

Quick & Easy Crustless Spinach Quiche Recipe

1 Onion; large\chopped
1 tb Vegetable oil
1 Frozen chopped spinach (10-ounce package)\chopped spinach\thawed\pressed dry
5 Eggs; beaten
3 c Muenster cheese; shredded
1/4 ts Salt
1/8 ts Pepper

Saute onion in oil in a large skilet until tender. Add spinach, and cook until excess moisture evaporates; cool. Combine eggs, cheese, salt and pepper; stir into spinach mixture. Pour into a greased 9-inch pie plate. Bake at 350F for 30 minutes or until set. YIELD: One 9-inch Quiche.

Easy Potato Quiche Recipe

Yield: 4 Servings

2 1/2 c Mashed potato (use instant or left over)
1 c Mixed vegetables -- diced and cooked
1/2 Onion -- chopped
1/2 c Corn -- cooked
1/4 c Peas -- cooked
1/4 c Green beans -- cooked
pn Garlic, cayenne, basil, sage to taste
1 1/2 c Cottage cheese
3 Eggs

Prep Time: 15 mins, Cook Time: 35 mins

Line a quiche dish with mashed potato. Mix all vegetables and herbs and spices together with the cheese and egg whites. Spread over the potato base. Bake in moderate oven for 35 to 40 minutes until the filling has set.

Quick Skillet Lasagna Recipe

Yield: 6 Servings

4 c Rotini pasta (12 oz)
1 ts Vegetable oil
2 sm/med Zucchini, cubed
1 Onion, chopped
1/2 Sweet red/green pepper, diced
4 c Mushrooms, sliced
1 1/2 c Cooked ham, diced
1 ts Dried oregano
1/4 ts Pepper 1
12 oz Jar spaghetti sauce
15 oz Tub ricotta cheese
2 c Mozzarella, part-skim, -shredded

Prep Time: 20 mins, Cook Time: 25 mins

In pot of boiling salted water, cook rotini until tender but firm, about 6 minutes. Drain in colander; set aside.

In nonstick ovenproof skillet, heat oil over medium-high heat; cook zucchini, onion, red pepper, mushrooms, ham, oregano and pepper for 8 minutes or until tender, tossing often. Add spaghetti sauce; cook, stirring occasionally, for 5 minutes. Stir in pasta. Spread ricotta evenly over top; sprinkle with mozzarella. Broil for 5 minutes or until golden brown.

Easy Chili Recipe

Yield: 4 lg servings

3 c Cooked (canned) Red Kidney Beans
1 1/2 lb Lean hamburger
24 oz Canned tomato sauce
1 Onion, chopped
1 Clove garlic, chopped
3 tb Chili powder
2 ts Cumin
1 ts Paprika
1 ts Thyme
1 ts Oregano

Cook Time: 1 + hr

Saute hamburger and chopped onion, drain. Add to beans with spices, garlic and tomatoes. Salt & pepper to taste. Simmer 1 hour or until heated and flavors blend.

Quick Curry Beef Recipe

Yield: 4 Servings

12 oz Wide egg noodles or 1-1/3 cups long-grain white -rice
1 tb Olive oil
1 md Onion; thinly sliced
1 tb Curry powder
1 ts Ground cumin
2 Cloves garlic; minced
1 lb Lean ground beef
1 c 8 oz sour cream
1/2 c 2% milk
1/2 c Raisins; divided
1 ts Sugar
1/4 c Chopped walnuts, almonds or pecans

Prep and Cook Time: 30 mins

Cook noodles or rice according to package directions. Meanwhile, heat oil in large skillet over medium-high heat until hot. Add onion; cook and stir 3 to 4 minutes. Add curry powder, cumin and garlic; cook 2 to 3 minutes longer or until onion is tender. Add meat; cook 6 to 8 minutes or until meat is no longer pink, breaking meat apart with wooden spoon. Stir in sour cream, milk, 1/4 cup raisins and sugar. Reduce heat to medium, stirring constantly, until heated through.

Spoon over drained noodles or rice. Sprinkle with remaining 1/4 cup raisins and nuts.

Quick Barbecue Beef Bake Recipe

Yield: 10 Servings

1 lb Ground beef
3/4 c Chopped onion
18 oz Barbecue sauce
2 c Shredded cheddar cheese
2 c Bisquick Original
1 c Milk
2 Eggs

Prep time: 18 min, Cook time: 27 min

HEAT oven to 400F. Cook ground beef and 1/2 cup of the onion in 10" skillet until beef is brown; drain. Stir in barbecue sauce. Spoon into ungreased 13x9x2" baking dish; sprinkle with cheese. STIR baking mix, milk and eggs until blended. Pour over beef mixture. Sprinkle with remaining onion. BAKE 25-27 minutes or until crust is light golden brown.

Quick Beef Pie Recipe

Yield: 2 Servings

1 1/2 lb Ground beef
1 md Onion, chopped
1/2 ts Salt
1 cn Condensed tomato soup 10 1/2 oz. size
1 cn Cut green beans, drained 16 oz.
1/4 ts Pepper
2 c Potatoes, seasoned & mashed
1/2 c Chedder cheese, shredded

Cook Time: 40 min

Crumble beef into large fry pan. Add onion and salt, and cook until browned. Drain off excess fat. Add soup, green beans and pepper. Simmer for 5 minutes. Pour into a greased 2 quart casserole. Spread mashed potatoes over the top. Sprinkle with cheese. Bake at 350F for 20 minutes.

Quick & Easy Beef Stir Fry Recipe

Yield: 4 servings

1 lb. beef round tip steaks, -cut to l/4-inch thick
3 tb Soy sauce
2 tb Each dry sherry and water
1 tb Cornstarch
1 tb Vegetable oil
1 Cloves garlic, crushed
1 sm Onion, cut into thin -wedges
1 pk (16 oz's.) frozen vegetable -medley thawed

Prep Time: 10 minutes, Marinate: 15 min, Cook time: 6-10 min

Stack beef round tip steaks on cutting board; cut crosswise into 1-inch strips. Cut strips into 2-inch pieces. Combine soy sauce, sherry, water and cornstarch; mix well. Place beef and marinade in plastic bag, turning to coat. Close bag securely and marinate at room temperature 15 minutes.

Meanwhile, heat large non-stick skillet or wok over medium-high heat 5 minutes. Drain beef; reserve marinade. Add oil and stir-fry beef and garlic (1/2 at a time) 1-2 minutes or until beef is barely pink in center. Reduce heat to medium. Add onion; stir-fry 1 minute. Add vegetable medley; stir-fry 2-4 minutes or until vegetables are hot and tender-crisp. Return beef and accumulated juices and the reserved marinade to skillet. Heat 1 minute or until beef is heated through and sauce is slightly thickened.

Quick & Easy Meat Loaf Recipe

Yield: 8 Servings

10 3/4 oz Cream of -Mushroom Soup
2 lb Ground beef
1 pkg Campbell's Dry Onion Soup Mix
1/2 c Dry bread crumbs
1 Egg, beaten
1/4 c Water

Prep Time: 15 min, Cook Time: 1 1/4 min

In a large bowl, mix thoroughly 1/2 cup of mushroom soup, beef, onion soup mix, bread crumbs and egg. In 12 x 8-inch baking pan, firmly shape meat mixture into an 8 x 4-inch loaf. Bake at 350F for 1 1/4 hours or until done. Spoon off 2 tablespoons drippings, reserve. In a saucepan over medium heat, heat remaining soup, water and reserved drippings to boiling, stirring occasionally. Thin sauce with additional water to desired consistency. Spoon over meat loaf.

Quick Ham Quiche Recipe

Yield: 5 Servings

1 pk Crescent rolls (8 count)
3/4 c Cubed monterey jack cheese
1/4 c Cubed mozarella cheese
3/4 c Cubed ham, cooked
2 Eggs
1/4 c Parmesan cheese

Prep time: 15 min, Cook Time: 45 min

Preheat oven to 350F. Using 5 crescent rolls line the bottom and sides of a glass pie pan. Press and stretch to fill gaps. Fill lined pie pan with cheese cubes and ham. Beat together eggs and parmesan cheese, pour over ham and cheese cubes. Using the remaining 3 crescent rolls, make 4 strips and arrange a lattice work over filled pie pan and tuck ends under to seal. Bake at 350F for 45 minutes or until the center is set.

Quick Spanish Rice & Pork Chops Recipe

Yield: 4 Servings

4 Boneless Pork Chops
1/2 ts Kitchen Bouquet
4 sl Onion
2/3 c Quick Cooking Rice
1 2/3 c Pasta sauce with Mushrooms
1/2 c Water
1/2 c Mozzarella, shredded

Cook Time: 20 min

NOTE: Cooking times are based on using a 625-750 watt microwave oven and food quantities for 4 servings. Adjust cooking times as required.

Brush both sides of the pork chops with Kitchen Bouquet. Arrange in a single layer in a microwave safe (8" square) baking dish. Top each chop with a slice of onion. Cover with well vented plastic wrap. Microwave on high for 7 minutes. Turn the chops. Add the rice. Combine the pasta sauce and the water. Spoon over the chops. Recover with well vented plastic wrap. Microwave on high for 5 minutes. Microwave on medium (50%) until chops are tender (about 7 minutes). Sprinkle with the mozzarella. Let stand, uncovered, until the cheese melts (about 5 minutes). Serve.

Tuna Casserole

Yield: 4 Servings

4 oz Noodles, broad; uncooked
3 c Water; salted, boiling
1 cn Cream of mushroom soup
1/3 c Milk
7 oz Tuna; drained and flaked
1 c Peas; cooked
Buttered breadcrumbs

Prep and Cook Time: 40 min

Cook noodles in boiling salted water about 2 minutes. Cover and remove from heat, and let stand about 10 minutes. Meanwhile, combine mushroom soup, milk, tuna, and peas. Rinse noodles with warm water and drain well. Fold noodles into tuna mixture; pour into a greased 1 quart casserole. Sprinkle with breadcrumbs and bake at 350F about 30 minutes.
